Flattened Rice / Aval / Aatukulu / Poha is parboiled rice that is flattened. These flakes magically swell when soaked in hot or cold liquid. Aval is a simple food that can be consumed when soaked in milk with sugar.
It is widely consumed as it can be easily digestible and is rich in iron and low in calories.
Ingredients :
- Aval / Flattened Rice/ Aatukulu - 2 cups
- Oats - 1/2 cup
- Almond Powder - 1/2 cup
- Jaggery - 1 1/4 cup (Broken / Grated)
- Water - 1/2 cup
- Broken cashews - Handful
- Elaichi / Cardamom Powder - 1/2 tsp
- Ghee - 2 tbsps
Recipe :
1. Heat a pan with 1 tbsp of ghee and fry aval for 5 mins. You will see that ghee is completely absorbed. Remove from heat and let it cool.
2. In the same pan, dry roast the oats for 5 mins. Remove from pan and let it cool.
3. Now coarsely powder both aval & oats and keep aside. You can either either do one after the other or both together.
4. Now in this pan, add jaggery and water. The jaggery will melt and bubbles start appearing.
5. Once you see full bubbles add the coarse powder in batches and mix without lumps.
6. Now add the almond powder slowly and keep mixing. Dont let any lumps stay.
7. Add the broken cashews and 1 tbsp of ghee.
8. Mix well that everything comes together like a ball. Turn off the heat and leave for 5 mins.
9. Make balls carefully while its still hot or else it will start turning hard and cant be shaped into a laddoo.
10. Store in air tight container. It will turn little hard later and you will be slight crunchy.
Enjoy the tasty & healthy laddoos..
