Andhra Special ~ Sunnundalu (Sugar & Jaggery)

Sunnundalu / Minapa undalu are Andhra famous laddoos with urad dal / mina papu as base. The roasted, powdered urad dal is mixed with either sugar / jaggery and binded with ghee.

Intake of sunnundalu improves the bone health, digestion of food as urad dal promotes fiber content. This is a healthy laddoo with various health advantages, so this can be taken by kids, adults, pregnants and all.



Ingredients :


- Urad dal - 2 glasses

- Sugar - 1 glass

- Jaggery - 1 glass

- Ghee - 2 glasses

- Elaichi - 1 tsp


Pre - Process :


1. For 2 types of laddoos separate the urad dal to 1 glass each. Then dry roast urad dal. This must be done on medium flame and continuously fried.



2. The color should slightly change to brown. Dont burn or over fry as that spoils the color and taste of the laddoo.


3. When nice aroma comes, transfer to a plate and let this cool completely.



4. Now powder the cooled urad dal. Dnt powder if urad dal is hot as that will make the laddoo sticky when consumed.


5. The powder should neither be smooth nor very coarse.


Now the dal powder is all ready.



Sugar / Panchadaara Sunnundalu :


1. In a blender, powder 1 glass of sugar and 1/2 tsp elaichi seeds into smooth powder.



2. In a mixing bowl, add 1 glass of roasted urad dal powder, sugar powder in batches and mix well.



3. Keep checking the sweetness. You can slightly reduce the sweetness if you desire.


4. Heat 1 glass of ghee and add that to the powder mix in batches. Keep mixing with a spatula initially.



5. Then mix well with hand and check if laddoo can be formed. Add more ghee if needed to bind.



Shape round laddoos and enjoy.




Jaggery / Bellam Sunnundalu :


1. In a mixing bowl, add roasted urad dal powder, jaggery powder in batches and 1/2 tsp elaichi powder. Mix this well.



2. Keep checking the sweetness. You can slightly reduce the sweetness if you desire.


The sweetness of jaggery differs with type, if 1 glass is not sufficient then you can add little more and vice-versa.


3. Heat 1 glass of ghee and add that to the powder mix in batches. Keep mixing with a spatula initially.


4. Then mix well with hand and check if laddoo can be formed. Add more ghee if needed to bind.


Shape round laddoos and enjoy.



The super healthy laddoos are all ready to be relished.
