Ragi Gunta Ponganalu / Paniyaram with Peanut chutney

Gunta Ponganalu / Paddu / Paniyaram is a traditional snack prepared in Andhra , Telangana and Karnataka. These fluffy balls are often prepared with either the dosa or idly batters or even instantly with semolina.


Presenting you a healthy version for kids / adults with Ragi flour mixed in the batter.



Ingredients :


- Ragi Flour - 1 cup

- Dosa Batter - 2 cups

- Onions - 1/2 cup (Finely chopped)

- Grated carrot - 1/2 cup

- Spinach - 1/2 cup ( Finely chopped)

- Green chillies - 3-4 (Finely chopped)

- Salt - as required

- Rice flour - 2 tbsps

- Jeera - 1/2 tbsp

- Oil - 1/2 cup


For Chutney -


- Peanuts - 1 1/2 cups

- Green chillies - 6-7

- Jeera - 1 tsp

- Curry Leaves

- Salt - as required

- Curd - 1/2 cup

- Water - as required

- Jeera, Mustard seeds, Channa dal, Urad dal - 1/2 tsp each

- Curry leaves

- Hing / Asafoetida - 1/2 tsp

- Dry red chillies - 2-3


Recipe :


  1. In a mixing bowl, mix ragi flour and dosa batter without any lumps. Add salt as per your taste and let this sit for 1 hr.

2. Add the finely chopped veggies, rice flour and jeera to the batter. Check for the salt and mix well.

3. Now heat the ponganalu pan and add little oil in all the holes.

4. When hot add spoonful of batter and level up. After filling all the holes, close with a lid if possible and let it cook for 5 mins.

5. Turn to the other side and cook for 2-3 mins. Then take them off into a plate.

6. For Chutney : Dry roast the peanuts and remove their skin.

7. In a small pan, heat oil and add jeera. When jeera splutters add green chillies and curry leaves. Fry this well and keep aside to cool.

8. When cooled add the peanuts, prepared tadka , curd and blend . Half way add water and salt as required. Blend smooth.


9. Prepare the tadka and add to the chutney.


Enjoy the delicious healthy ponganalu / paniyaram with the peanut chutney.
