Andhra Special ~ Paakam / Bellam Gaarelu



Andhra cuisine has a huge range of delicious & authentic dishes. These Paakam gaarelu are crispy wadas that are soaked in the jaggery syrup. This dish is prepared on festives and relished warm.

This can also be called as Sweet Wadas.


Ingredients :


- Urad dal - 1 cups

- Jaggery - 1 cup

- Water - 3/4 cup (for making syrup)

- Salt - 1/2 tsp

- Oil - for deep fry

- Elaichi / Cardamom powder - 1/2 tsp


Recipe :


1. Soak the urad dal for 2-4 hours and then blend well into paste. The batter can neither be loose nor too hard.

Add salt and mix well.


2. Heat oil for deep frying.


3. On a plastic cover wetting your hand take a ball of batter and shape into medhu wada. Carefully drop into hot oil and fry.


4. The wadas should turn brown and very crispy. Then take them into a tissue paper plate.


5.Jaggery syrup : In a pan add 1 cup of jaggery and add 3/4 cup of water. Let this boil well with elaichi powder. We need the syrup at 1 string consistency.


6. Transfer the syrup into a heat proof bowl when you reach 1 string consistency.


7. Now take the crispy wadas and carefully poke holes using fork. Then dip them into the syrup and pour little over.

Finish all the wadas.



8. Let this sit for 10mins. Then transfer the wadas into a serving bowl and generously pour over the syrup.


As you dip in crispy wadas they will stay crisp for 2-3 hours. Relish the wadas warm.
