Punugulu / Punukulu is a famous street food popular in the coastal areas of Andhra Pradesh. This is a deep fried snack and can be easily made out from the idly batter i.e. Urad dal, rice batter.
Ingredients :
- Idly Batter - 2 cups
- Rice Flour - 3 tbsps
- Chopped Ginger - 1 tbsp
- Chopped Green chillies - 5-6
- Chopped Onions - 1/2 cup
- Chopped Curry leaves
- Jeera - 1 tsp
- Salt - as required
- Oil - deep frying
For Chutney -
- Coconut pieces - 1/2 cup
- Curd - 1/3 cup
- Green chillies - 6-8
- Tamarind - a very tiny piece
- Mustard seeds - 1/2 tsp
For Tempering -
- Mustard seeds - 1/2 tsp
- Jeera - 1/2 tsp
- Channa Dal - 1/2 tsp
- Urad dal - 1/2 tsp
- Dry red chillies - 2-3
- Curry leaves
- Hing / Asafoetida - 1/2 tsp
Recipe :
1. Soak the mustard seeds, 4-5 green chillies and the tiny piece of tamarind for 20-30 mins.
2. In a mixing bowl, add idly batter, salt, rice flour, chopped ginger, chopped green chillies, chopped onions and curry leaves. Mix well without any lumps.
3. The batter should neither be flowing nor too hard. If needed adjust the consistency with rice flour.
4. Drop like small balls using wet hands in hot oil and fry till golden brown. Take them into a tissue paper.
5. For chutney - In a mortar and pestle or in a blender using little water make the paste of the soaked mustard, green chillies and tamrind.
6. In a separate blender, blend coconut, curd and salt into smooth paste.
7. Now in a bowl mix the mustard paste with the coconut paste. Check for the seasoning. Prepare the tadka and add to the chutney.
Relish hot as an evening snack . This will also be a perfect monsoon snack too..
