This is a simple and quick mixed veg curry spiced with the curry powder. This is also a perfect dish any festive platter, as this has no onions or garlic.
Ingredients :
- Cauliflower Florets - 1 cup
- Chopped Carrots - 1 cup
- Chopped Beans - 1 cup
- Green Peas - 1 cup
- Salt - as required
- Turmeric - 1/2 tsp
- Curry Powder - 3-4 tbsps
- Chilli Powder - 1 tsp
For Tempering -
- Jeera - 1/2 tsp
- Mustard seeds - 1/2 tsp
- Urad dal - 1/2 tsp
- Channa dal - 1/2 tsp
- Dry Red Chillies - 3-4
- Oil - 2 tbsps
- Curry Leaves - 6-7
Recipe :
1. Heat a pan with oil , add the tempering ingredients and let them splutter.
2. Add all the veggies and let it fry for 5 mins.
3. Now add turmeric and salt. Mix well and close the lid, cook till the veggies turn soft.
4. Add chilli powder and the curry powder and let the veggies cook together.
5. Adjust the spices if required.
This can be served with rice or rotis.
