Flavoured Rice (No Onion / Garlic) ~ One pot meal



This is a simple flavored rice with no onions / garlic and a perfect dish for any puja thalli or upvass food.



Ingredients :


— Basmati rice - 2 cups

— Soaked White Peas / batani - 1 cup

— Chopped carrot - 1 cup

— Soaked Meal maker / soya chunks - 1 cup

— Jeera - 1 tsp

— Slit green chillies - 7-8

— Ginger - 2 inches

— Curd - 1/4 cup

— Salt - as required

— Bay Leaf - 2-3

— Grated Nutmeg powder - 1/2 tsp

— Cloves - 4-5

— Star Anise - 1-2

— Cinnamon - 1 inch

— Kapok buds - 1-2

— Cashews - 10-15

— Ghee - 2 tbsps

— Oil - 1 tbsp

 — Kasuri Methi - 1 tbsp

— Water - 3 1/2 cups

— Chopped Coriander 

— Chopped Pudina

— Masala Powder - 1 tsp


Raita :

— Curd - 2 cups

— Salt - as required

— Chilli powder - 1/2 tsp

— Jeera Dhaniya powder - 1/2 tsp

— Chat Masala - 1/2 tsp

— Water - 3-4 tbsps


Recipe :

1. Soak the batani overnight.

Just as you start cooking soak the soya chunks in hot water and squeeze out the water.


2. In a blender, add 1 inch ginger, jeera and 4-5 green chillies and coarsely blend into paste.


3. Heat 1 tbsp ghee and oil in a pressure cooker and add all the biryani dry spices. When nice aroma comes, add some chopped ginger. slit green chillies and cashews. Fry well.


4. Now add jeera-green chillies-ginger paste and fry till raw smell wades off. Then add chopped carrots and batani and fry for 5 mins more.


5. Add salt, kasuri methi and meal maker and fry well.


6. You can add curd and mix well. When oil slightly oozes out add washed basmati rice. Without breaking rice mix and fry for 5 mins.


7. Add water, chopped coriander, chopped pudina and 1 tbsp ghee. Close the pressure cooker lid and cook for 2 whistles.


8. When pressure is off, mix well without breaking rice.


9. Mix everything under raita for no onion raita.


10. Serve and enjoy hot.
