Potatoes are everybody's favorite and spicy ones taste wonderful as a side dish to Sambar or with rice. This can be a great combo to rotis as well..
Ingredients :
- Baby Potatoes - 1/2 kg
- Onion - 1 big
- Oil - 4 tbsps
- Ginger garlic paste - 1/2 tsp
- Salt - as required
- Chilli Powder - 2-3 tsps
- Turmeric - 1/2 tsp
- Jeera - 1/2 tsp
- Asafoetida / Hing - 2 pinches
- Dry Mango / Amchur Powder - 1/2 tsp
- Curry leaves - 1 strand
Masala Ingredients :
- Urad dal - 1 tsp
- Jeera - 1 tsp
- Dhaniya - 1 tsp
- Pepper - 1 tsp
- Fennel seeds / Saunf - 1 tsp
- Curry Leaves - 2 strands
Recipe :
1. Wash, boil and peel the skin off the baby potatoes. Don't cook and make mushy.
2. Dry roast the masale ingredients and powder them coarsely when cooled.
3. In a pan heat oil, add jeera and hing. Let the seeds splutter and then add ginger garlic paste. Fry this well.
4. Add turmeric, amchur and chilli powders along with curry leaves now and mix.
5. Add boiled baby potatoes and fry along with salt as required. Fry these potatoes for 8-10 mins.
6. Now remove the potatoes from the pan and keep aside.
7. Add finely chopped onions and fry till the onions are perfectly cooked.
8. Add the potatoes back and mix well. You can add the prepared masala powder and mix carefully so that the potatoes are not broken.
9. Cover and cook for 5 mins. Adjust the spices too.
Relish with hot rice or rotis..
