Gajar Halwa or Carrot Halwa is a carrot based sweet pudding widely prepared in Indian homes. Grated carrots are cooked in milk, sugar and topped with ghee fried nuts.
This has been a traditional sweet prepared on many occasions like Diwali, Raksha - Bandhan and all.
Carrots are an excellent detoxifying food that contains properties that can help cleanse the liver while ghee and milk are good for the bone health.
Ingredients :
- Carrots - 15 - 20
- Milk - 2 cups + 1/3 cup
- Sugar - 1 1/2 cups
- Ghee - 1/2 cup
- Dry Fruits of your choice
- Milk Powder - 1/4 cup
- Almond Powder - 1/4 cup (optional)
Recipe :
1. Wash and clean the carrots. Peel and cut the heads and tails of the carrots.
Finely grate them and keep aside.
2. In a pan, boil 1/3 cup and when its boiling add the milk powder. Mix without lumps and cook till a soft ball is formed.
Keep mixing to avoid getting burnt. Unsweetened Khoya is ready
3. Heat a big pan and add ghee. Fry the dry fruits and keep aside.
4. In the same pan add the grated carrot and fry till raw smell wades off.
5. Add milk and cook till milk is all evaporated and carrot is perfectly cooked.
6. Now add the unsweetened khoya, almond powder and blend in well.
7. Now add the sugar and cook till you see ghee oozing out.
Garnish with nuts and relish hot on a cold evening.
